Chocolate Chunk Banana Bread

This recipe is inspired by Chrissy Teigen's famous "Uncle Mike's" recipe, with a few tweaks.   The loaf weighs approximately 1.5 lbs and is incredibly moist.  Chunks of Ghirardelli dark chocolate and yummy organic unsweetened coconut flakes provide a perfect balance  to the sweetness of the ripe bananas.
